These are a great alternative to regular fries, and sure to turn some heads when served.

1 LB Beets (1 Bunch should do it.)
Olive Oil
Salt and Pepper
2 TBS Fresh Parsley (Can use dried, just half the amount.)
2 Cloves Garlic minced
1 tsp Cumin
Grated Parmesan Cheese
1. Preheat oven to 400*.
2. Trim the top and bottom of the beets. Cut them into sticks, resembling a fry shape.
3. Put onto a cookie sheet, and drizzle them with olive oil. Sprinkle on your spices, and then toss to coat.
4. Make sure the beet fries are in a single layer on the pan, and then bake for 10-15 mins. Prick them to test if they’re done. They should be soft inside, but you want to get them crunchy on the outside to get that fry texture.
5. When you take them out, sprinkle with parmesan cheese before serving.
6. Enjoy!
