Leeks greens at first glance might be something you ignore when you get them, but they go well in a wide range of dishes.
In my house, the general rule of thumb is : If we’d usually add spinach to this dish, then leek greens can go in this dish.
We just leave out some of the onion, because the leek greens can be just as potent as the bulb on the bottom.

Cooked Leek Greens and Spinach
This makes a good side dish, and can easily be doubled or halved depending on how many people you are trying to feed.
Remember that spinach and leeks cook down a lot!
Feeds 8 people, as a side dish.
½ lb Spinach
½ lb Wild Leek Leaves
2 TBS Butter or Olive Oil
1 tsp Minced Garlic
1 tsp Lemon Juice
Salt and Pepper
1. Add your butter or oil to a pan.
2. Add the minced garlic and let it cook for a minute.
3. Add the Spinach and Wild Leek Leaves and cook until they are wilted. It will only take a couple minutes. Keep stirring!
4. Add the lemon juice, and salt and pepper to taste.
5. Enjoy!
